INGREDIENTS
1 cup chickpea flour
1 cup water
Salt and pepper
Spinach
Mushrooms, sliced
Olive oil
INSTRUCTIONS
1. In a bowl, whisk together the chickpea flour, water, salt, and
pepper to make a batter.
2. Heat a pan over medium heat and add the olive oil.
3. Pour in half of the batter and cook until the edges are set.
4. Top with spinach and mushrooms and fold the omelette in half.
5. Cook until the omelette is golden brown and the filling is heated
through.
6. Repeat with the remaining batter and filling.
