INGREDIENTS

  • 2 cups sweet potato, peeled and diced
  • 1 cup black beans
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 package vegan empanada dough

 INSTRUCTIONS

  1. Preheat your oven to 400°F (200°C).
  2. In a pan, sauté the onion and garlic until soft.
  3. Add the sweet potato, black beans, cumin, salt, and pepper.
  4. Cook until the sweet potato is soft.
  5. Roll out the empanada dough and cut into circles.
  6. Spoon the filling onto one half of each circle. 
  7. Fold the dough over the filling and crimp the edges to seal.
  8. Bake for 20 minutes until golden brown.
