Beets, peeled and cubed
Arugula
Olive oil
Balsamic vinegar
Salt and pepper
INSTRUCTIONS
1. Preheat your oven to 400°F (200°C).
2. Toss the beets with a little olive oil, salt, and pepper and roast for
45 minutes until tender.
3. In a large bowl, mix together the roasted beets and arugula.
4. Drizzle with olive oil and balsamic vinegar before serving.
