Sweet potatoes, peeled and cubed
Quinoa
Olive oil

INSTRUCTIONS

2. Toss the sweet potatoes with a little olive oil, salt, and pepper and
roast for 30 minutes until tender.
3. Cook the quinoa according to the package instructions.
4. In a large bowl, mix together the roasted sweet potatoes and
cooked quinoa.
5. Drizzle with olive oil and balsamic vinegar before serving.
